Not one to cater to trends, unconventional Chef Pierre Koffel shrugs, offhandedly understating his menu as "some French Cuisine classics, some not so classic..." when in fact, "not so classic" translates on the plate as fresh, convincing, original, and often inspired twists on the traditional.
